Step 1 : Beat eggs and add 1 teaspoon olive oil set aside

Step 2 : Heat 1 tablespoon of oil and saute mushrooms and tomatoes set aside
​
Step 3 : Pour in egg and over low heat and let it cook slowly
​
Step 4 : Spread the mushrooms and tomatoes evenly on the slightly runny omelette
​
Step 5 : Garnish with favourite herbs

The Recipe's Story
Mushrooms have been shown to help delay mental decline. This recipe has the added advantage of lycopene an antioxidant released by cooked tomatoes. These antioxidants protect heart and studies have indicated that it may help lower risks of prostate cancer.

This dish is the favourite of my English brother in law Gordon a sergeant in Her Majesty's Armed Forces. He served in Malaya during the insurgency in 1955 and in the Middle East in late 1950’s. He was one of the most special persons I have ever known. Soft spoken and always had a comforting smile. I have never heard him speak ill of any one and he never bore grudges. He had this incredible tolerant manner that I find hard to emulate.He was popular with his soldier friends because he will always make their beds for them before morning inspections. My sister and I have frequent conversations on the phone from London. Sometimes we have a chat too but before he hangs up he will always say ”Keep smiling and that is an order!”

Now he is smiling from heaven as he left us suddenly in February 2018. My sister was so blessed to marry such a remarkable man. During his funeral, standard bearers from several regiments including the SAS (Special elite forces) paid their respects. It was such an honour.

I will always remember him with a smile because that was his “military order”.
